Last week brought about a liberating moment for me.
I posed a question to the high performing moms in our self-care club, asking, ‘What’s an area in your life where you wish you had more help or understanding?’ It dawned on me that I wasn’t the only mom yearning for additional assistance in the meal planning department.
I’m worn out from the monotony of the same meals, and the lack of time to explore new recipes has left me wishing for a helping hand. I would love for someone to come and assist me with new tried-and-tested, nutritionally balanced recipes and perhaps even train my staff to prepare them.
After going through the responses from the moms, it became clear that the challenge with meal planning lies in the time it demands. Determined to find a solution, I started exploring time-saving recipes, and guess what? I stumbled upon one that I’ve been loving so much.
So, dear moms, if you only have time for one wholesome meal, try this quick breakfast recipe out! It’s hormone-loving and anti-inflammatory – an amazing way to show love to your body!
Chia Pudding
You will need:
- 2 cups almond milk
- 1/2 cup chia seeds
- 1/4 cup maple syrup or raw honey
- 1 teaspoon vanilla extract
- 1 cup chopped mangoes
- 1/2 cup chopped cashews/almonds (divided)
Procedure:
- In a quart jar with a tight-fitting lid, combine the almond milk, chia seeds, maple syrup, and vanilla. Shake well and set aside for at least 15 minutes. (You can also do this before bed and refrigerate overnight.)
- Divide the pudding among four bowls and top each with 1/4 cup of mangoes and 2 tablespoons of cashews/almonds.
