Basil & Scallion Oil Noodles

When I’m stuck on ideas for activities with the kids, cooking often comes to the rescue. Last week, I stumbled upon a recipe on Instagram, saving it for moments just like these.

Well, the moment arrived sooner than expected, and we dove into making those noodles together. Let me tell you, they turned out absolutely delicious!

Now, we didn’t have noodles on hand, so we improvised with some tagliatelle pasta we found in the pantry.

If you’re ever in need of a fun bonding activity with your child, give this recipe a try. It’s not only enjoyable but yields some tasty results too! Here’s how it goes:

Basil & Scallion Oil Noodles

To a heatproof bowl add.

  • 1/2 cup finely chopped basil leaves
  • 1/4 cup finely-chopped scallions
  • Handful of cilantro (dhania)
  • 1 – 2.5 tbsp minced ginger
  • 3-4 cloves of minced garlic
  • 2-3 tsp gochugaru / chilli flakes
  • 2-3 tsp sesame seeds

(Adjust according to taste, eg adding more 🌶️ for spice or garlic if you like!)

Heat 2 tbsp of neutral-flavoured oil + 2 tbsp of sesame oil (or you could just heat 3-4 tbsp of a neutral-flavoured oil of choice)

Pour it over the herby mixture. Let it sizzle then pour in:

  • 1.5 tbsp light soy sauce
  • 1.5 tbsp dark soy sauce
  • Juice or a lemon

Toss in your cooked noodles, mixing well to combine. Garnish with more chopped basil and scallions and ENJOY!
